F is for Fattening

I don't care that it's still 75 degrees outside and all of the leaves are green and on the trees. It's fall, dangit, and I'm making soup. This stuff is awesome in bread bowls. When you're already eating a million calories, what's a few hundred more for a bread bowl, right?
Cheesy Broccoli & Potato Soup
2 potatoes, peeled and cubed
2 c. broccoli, chopped
1 small onion, diced
2 chicken bullion cubes
1/2 c. margarine or butter
1/2 c. flour
2 c. milk
1 1/2 t. salt
1/2 t. sugar
Pepper to taste
1 c. cheddar cheese, grated

Combine potatoes, broccoli, onion, and bullion cubes in a large stockpot; cover with water and boil until vegetables are tender (about 15 minutes). Meanwhile in a separate pot, melt margarine and add flour and milk to make a white sauce. Add salt, pepper, sugar, and cheese; stir until cheese is melted. Add cheese sauce to vegetable pot (do not drain vegetables) and heat until thickened.

Just for good measure - you know, to make sure I'm thoroughly fattened for winter - I also made these. I don't know how to describe how good they are; you'll just have to make them yourself. You'll thank me. (A note on the filling: I don't have a sieve, and it turned out fine. Just whisk the flour and milk thoroughly to make sure it's smooth.)

I can attest to this recipe being the BEST soup. I have been making this every Fall since you first gave me the recipe like 6 years ago. In fact, I just made it last week, even though it's still 100 degrees here. Thanks Katie!

Yummy! I have been feeling the need to increase my calories to gear up for my winter hibernation. I'll have to give the soup or chocolate or both a try.

Those chocolate cupcakes are divine!! Just made them. They are almost fudge-like! Yum! Thanks for sharing...I love that lady's blog, as well. She has lots of yummy looking stuff. What do you think about the frosting? It didn't seem sweet enough to use as frosting...have you tried it that way? I think it was awesome for filling, though. I was wondering about adding a little bit of powdered sugar to sweeten and make it not so buttery? What do you think? I would hate to waste a whole cube of butter by screwing it up! Thanks again
